Stability over coldness
A cellar is not a cold room. Comfort cooling can swing a few degrees and nobody notices; a cellar that swings works against the bottles every day it does it.
Humidity, both directions
Too dry and corks shrink. Too damp and labels and racking suffer. Cellar equipment is built to hold a band, not just to pull heat out.
The room, not just the unit
Insulation, vapour barrier and glass decide what the equipment has to fight. Sizing a cellar means reading the room it sits in.
Knowing before the wine does
Monitoring so a drift shows up as a notification rather than as a case of wine you open years later.
